Mangetout peas with tomato

Wash and shell mangetout peas and then put them in a pot with abundant salt water, leave them to boil for at least 20 minutes since water starts boiling. Meanwhile chop  onion and garlic and put them in a frying pan with a little extra-virgin olive oil, leaving them to dry for a couple minutes and then add mangiatout peas.
Sauté for 5 minutes, then add diced cherry tomatoes and leave them to cook for other 15 minutes so that flavours mix well. Salt and pepper and finally sprinkle with grated Parmesan cheese, that will melt thanks to mangetout peas heat.
