Orecchiette (smallears) pasta with rocket, potatoes and tomato

A dish with an easily explainable nickname, “a bandir” (the flag), and it is a part of Foggia’s gastronomic tradition. For those of you who have unclear ideas, we’re talking about pasta(usually “orecchiette”) with rocket, potatoes and tomato.
Listed the ingredients, it’s easy to understand why the dish has this nickname. White orecchiette pasta, mixed with green rocket and red tomato clearly reminds Italian flag. For its preparation, we need garlic, chilli pepper, and extra-virgin olive oil. In a pan full to the brim with salad water, we put potatoes cut into pieces. Bring to the boil the water for some minutes before adding orecchiette pasta and rocket.
At the same time, we fry lightly garlic, chilli pepper and cherry tomatoes in a pot for some minutes, just the time to cook cherry tomatoes and to brown the garlic. Drain orecchiette pasta, rocket and potatoes, and pour in the pan with cherry tomatoes. Mix well, and drizzle olive oil.
