Sciuscelle of Salento

In a large bowl, open the eggs and add the grated cheese. Finely chop the parsley and add to the mixture. Season with salt and pepper and start to mix all ingredients together. Set aside the sciuscelle and dedicate to the preparation of the sauce for their cooking.
 In a saucepan, saute the onion in a little oil.Add the tomato sauce and cook for 30 minutes. Add two cups of water in the pot. After about half an hour, add the mixture of sciuscelle little at a time in the pan until all of the dough. Cook for another 30 minutes.
Serve sciuscelle season with the sauce cooking.
