Prawns in tomato and saffron sauce

Rinse the shrimp with cold water and pat dry. Peel the onion and garlic and cut into cubes. Carve a cross on the skin of the tomatoes, blanch in boiling water and remove the peel. Cut them into four parts, remove the seeds and cut the flesh into cubes.
Soak saffron in 3 tablespoons of hot water. Heat the oil in a pan and sauté the prawns on both sides. Season with salt and pepper and remove from heat.
Fry in a pan with oil, onion and garlic over medium heat. Add the tomatoes and continue to simmer. Add the red pepper and saffron with water and wait until it boils. Season with salt and pepper and continue cooking for about 5 minutes.
Wash the tomatoes, cut in half. Add the prawns with cherry tomatoes to the sauce and reheat for 2-3 minutes. Serve the prawns on plates with the sauce and garnish with mint.
