smoked salmon cake with, caviar and sabayon’s tomato

Step 1. Cut the fennel fine and mix with lemon juice, olive oil, mustard, chopped onions. 6-8 chopped tomatoes into small cubes; Season with salt and pepper.

Step 2. For the sabayon, beat and halved cherry tomatoes, chives, mustard and mayonnaise with oil. Assemble the dish putting into each bowl of salmon into thin slices; then add the seasoned fennel. To put fennel, turn the bowl in the center of a plate of food. Put a thin strip of the cake eggnog, which has given the spiral shape. Sprinkle with pine nuts. To finish the cake put some salmon caviar on the top.
